Champagne biscuit or not….

The french are notorious for their elegant and sophisticated cuisine, but more specifically desserts. French desserts hold the standard to which any dessert is made.

This pink, soft-centred, powdered sugar crusted biscuit does just that. It holds the standard. Made from simple ingredients such as eggs, flour, sugar, cornflour, baking powder, red food colouring, vanilla extract and powdered sugar.

Although simple in its preparation, the taste speaks for itself. It’s name…. Biscuit Rose de Reims. It literally translates to the ‘pink biscuits of Reims‘.

Created in 1691, the Biscuits Rose de Reims is one of the jewels of the city of Reims, situated in the Champagne Region of France, a great historic province of France.

Their moniker ‘champagne biscuits’ has to do with the region itself and how it’s supposed to be eaten. Dipped in sparkling champagne. Sounds like heaven, right?

The biscuits are made exclusively in Reims, in particular the Biscuits Fossier Company. Since I couldn’t go to France and taste these biscuits, I decided to make them at home. Found an easy recipe and took a chance.

It was no surprise to me that the original recipe for Biscuit Rose de Reims still remains a secret. The french are famous for their exclusivity when it comes to their products.

As per the instructions I ate the biscuits dipped in champagne. It was sublime. Melt in your mouth sublime. If only I could afford real champagne from Reims. That would be the cherry on top.

Over time, the way in which locals eat these biscuits have expanded to having them dipped in coffee, milk or even red wine. On top of that, Biscuits Rose de Reims are used in the French Charlotte cake. A dessert to impress any dinner guest.
